Zucchini Fritte

I stole this recipe for Zucchini Fritte from a cookbook called Air Fryer: Quick & Easy Recipes! This tasty vegetable recipe is another great way to use your air fryer. Zucchini is sliced lengthwise. Then flour, cornstarch, salt, garlic powder, oregano and pepper is mixed in a bowl. Next the flour mixture is whisked into a bowl of club soda and whisked until it looks like pancake batter. The zucchini slices are dipped into the batter, then coated with panko bread crumbs. After the air fryer is preheated, the zucchini is cooked in batches and sprinkled with parsley and Parmesan cheese. This recipe is another great way to eat your greens!

Trim the ends of 1 ½ lbs medium zucchini (about 8 inches long), then cut lengthwise into ¼ inch thick pieces.

Combine ½ cup flour, ¼ cup cornstarch, ½ tsp salt, ¼ tsp garlic powder, ¼ tsp oregano and ¼ tsp pepper in medium bowl; mix well.

Pour ¾ cup soda water into a large bowl. Gradually whisk flour mixture into soda water just until blended. Working with one piece at a time, dip zucchini slices into batter to coat; let excess batter drip back into bowl.

Then add the zucchini to a bowl with 3 cups panko breadcrumbs. Press the zucchini into the breadcrumbs and coat each side.

Preheat air fryer to 390 F. Line basket with parchment paper. Cook in batches 7 to 10 minutes or until golden brown.

Place the cooked zucchini on a baking sheet and sprinkle with ¼ cup grated Parmesan cheese and parsley. Keep warm in the oven.

Serve as is or with your favorite dipping sauce.

  • ¾ to 1 cup soda water
  • ½ cup AP flour
  • ¼ cup cornstarch
  • ½ tsp coarse salt
  • ¼ tsp garlic powder
  • ¼ tsp dried oregano
  • ¼ tsp black pepper
  • 3 cups panko breadcrumbs
  • 1 ½ lbs medium zucchini about 8 inches long, ends trimmed, cut lengthwise into ¼ inch thick pieces
  • ¼ cup grated Parmesan or Romano cheese
  • Chopped fresh parsley

Instructions

  1. Pour ¾ cup soda water into a large bowl. Combine flour, cornstarch, ½ tsp salt, garlic powder, oregano and pepper in medium bowl; mix well. Gradually whisk flour mixture into soda water just until blended. Add additional soda water, if necessary, to reach consistency of thin pancake batter. Place panko in a shallow dish.
  2. Working with one piece at a time, dip zucchini slices into batter to coat; let excess batter drip back into bowl. Add to panko; pressing into zucchini slices to coat both sides completely.
  3. Preheat air fryer to 390 F. Line basket with parchment paper.
  4. Cook in batches 7 to 10 minutes or until golden brown. Sprinkle with cheese and parsley.
