I stole this recipe for 4 Ingredient Banana Bread from Kristina Vänni from tasteofhome.com. Originally is was only three ingredients, but I added pecans to make it 4 ingredients. This delicious hack for banana bread starts with cake mix. Yellow cake mix is combined with mashed bananas, eggs and chopped nuts. The batter is transferred to a loaf pan. Then baked until golden brown. This recipe is quick and easy to make, perfect for beginning bakers and a great way to use up ripe bananas.

The ingredients for this recipe are: 3 to 4 very ripe bananas, 1 box (15.25 oz) yellow cake mix, 2 large eggs and chopped pecans

If the bananas aren’t ripe, they can be ripened in the oven. This is perfect when bananas are on sale, but under ripe. Line baking sheet with parchment or foil. Place the bananas on the baking sheet.

Then bake at 300 F for 30 to 40 minutes until blackened and soft to touch.

Cool then mash the bananas.

Next add the cake mix and egg, mix well to combine.

Fold in chopped pecans.

Transfer batter to greased 9×5” loaf pan.

Bake at 350 F for 45 minutes, until toothpick comes out clean.

Cool in pan for 10 minutes then cool on wire rack before slicing.

  1. Mash bananas to yield 1 ½ cups.
  2. Mix mashed bananas with cake mix and 2 eggs. Mix well.
  3. Transfer batter to greased 9×5” loaf pan. Bake at 350 F for 45 minutes, until toothpick comes out clean.
  4. Cool in pan for 10 minutes then cool on wire rack.
