This tasty vegetable recipe is another great way to use your air fryer. Zucchini is sliced lengthwise. Then flour, cornstarch, salt, garlic powder, oregano and pepper is mixed in a bowl. Next the flour mixture is whisked into a bowl of club soda and whisked until it looks like pancake batter. The zucchini slices are dipped into the batter, then coated with panko bread crumbs. After the air fryer is preheated, the zucchini is cooked in batches and sprinkled with parsley and Parmesan cheese.

Ingredients
¾ to 1cupsoda water
½cupAP flour
¼cupcornstarch
½tspcoarse salt
¼tspgarlic powder
¼tspdried oregano
¼tspblack pepper
3cupspanko breadcrumbs
1 ½lbsmedium zucchiniabout 8 inches long, ends trimmed, cut lengthwise into ¼ inch thick pieces
¼cupgrated Parmesan or Romano cheese
Chopped fresh parsley
Instructions
Pour ¾ cup soda water into a large bowl. Combine flour, cornstarch, ½ tsp salt, garlic powder, oregano and pepper in medium bowl; mix well. Gradually whisk flour mixture into soda water just until blended. Add additional soda water, if necessary, to reach consistency of thin pancake batter. Place panko in a shallow dish.
Working with one piece at a time, dip zucchini slices into batter to coat; let excess batter drip back into bowl. Add to panko; pressing into zucchini slices to coat both sides completely.
Preheat air fryer to 390 F. Line basket with parchment paper.
Cook in batches 7 to 10 minutes or until golden brown. Sprinkle with cheese and parsley.
