Pecan Crusted Chicken Tenders

I stole this recipe for Pecan Crusted Chicken Tenders from a cookbook called Air Fryer: Quick & Easy Recipes! This delicious chicken recipe can be a main dish or an appetizer. Chicken tenders are dredged in flour, then in a mixture of milk and eggs. Next the chicken is coated in a mixture of crushed cornflakes, chopped pecans and salt. The basket of an air fryer is lined with foil and the chicken is placed inside and cooked in batches until golden. If you love fried chicken, you’ll love this recipe! This chicken tastes like deep fried chicken without all the mess of an oil fryer.

Place ½ cup flour in a shallow dish. Beat ½ cup milk and 1 egg in another shallow dish. Combine 1 cup cornflake crumbs, ⅔ cup finely chopped pecans and ¾ tsp salt in a third shallow dish.

Dip both sides of the chicken in the flour.

Then dip the chicken in the egg mixture. Roll the chicken in the crumb mixture to coat completely, pressing crumbs into chicken to adhere.

Preheat air fryer to 390 F. Line basket with foil; spray with nonstick cooking spray. Place a few pieces into the basket.

Cook in batches 18 to 20 minutes or until chicken is no longer pink in center.

Place the chicken on a baking sheet and keep warm in the oven while cooking the chicken in batches.

Cool completely. Serve as is or with your favorite dip.

  • ½ cup milk
  • 1 egg
  • 1 cup cornflakes cereal crushed
  • cup finely chopped pecans
  • ¾ tsp salt
  • 1 ¼ to 1 ½ lbs chicken tenders cut in half lengthwise

Instructions

  1. Place flour in a shallow dish. Beat the milk and egg in another shallow dish. Combine cornflakes crumbs, chopped pecans and salt in a third shallow dish.
