Yummy Zucchini Fritters

I stole this recipe for Yummy Zucchini Fritters from tasteofhome.com who stole it from Trisha Kruse from Eagle, Idaho. This recipe is another great way to cook zucchini. Buttermilk and eggs are mixed together in a small bowl. Then in another bowl Panko breadcrumbs, seasoned breadcrumbs, grated Parmesan cheese, taco seasoning and garlic salt are stirred together. Sliced zucchini is dipped in the egg mixture, then in the breadcrumb mixture. Next the coated zucchini are placed on a baking sheet. The zucchini is baked until golden brown, turning once while cooking. These fritters can be served as an appetizer, side dish or snack. Everyone will love these zucchini slices.

The ingredients for this recipe are: ¼ cup buttermilk, ¼ cup egg substitute, ½ cup panko bread crumbs, ½ cup seasoned bread crumbs, ¼ cup grated Parmesan cheese, 1 ½ tsp taco seasoning, ¼ tsp garlic salt and 3 medium zucchini

In a shallow bowl, combine buttermilk and egg substitute. Then in another shallow bowl, combine breadcrumbs, cheese, taco seasoning and garlic salt.

Cut the zucchini into ¼ inch slices, then dip zucchini in buttermilk mixture.

Next dip in bread crumbs mixture.

Place coated zucchini on a baking sheet coated with cooking spray.

Bake at 400 for 20-25 minutes or until golden brown, turning once.

Serve warm.
