Creamy Shrimp Pasta with Mushrooms

I stole this recipe for Creamy Shrimp Pasta with Mushrooms from juliasalbum.com. This tasty shrimp dish is perfect for a weeknight meal. Shrimp is seasoned and cooked in a skillet. Then mushrooms are cooked before adding half-n-half, Parmesan cheese and mozzarella cheese. Next, cooked pasta is added into the sauce before serving. A simple and tasty way to enjoy shrimp!

In the 20th century shrimp was often served alone with a cocktail sauce and became popular on appetizer menus. Cook 8 oz pasta, reserve pasta water. Heat a large skillet until hot. Then add 2 tbsp olive oil, 3 minced cloves of garlic and 1 lb shelled and deveined shrimp. Cook 1 minute.

Then flip shrimp over and sprinkle cooked side with ¼ tsp dried basil, ¼ tsp paprika, ¼ tsp red pepper flakes and ¼ tsp salt. Cook for 1-2 minutes stirring occasionally.

Remove shrimp from skillet, set aside.

Next, add 8 oz sliced mushrooms to the empty skillet.

Cook on medium-high heat for 2 minutes, occasionally stirring, until soft and they release their juices. Sprinkle with salt. Add shrimp back to the skillet, and then add 1 cup half-n-half. Bring to a boil. After mixture boils, add ¼ cup Parmesan cheese and ¼ cup mozzarella cheese.

Next bring to a boil again, reduce heat to medium. Cook stirring until cheese is melted. Gradually add additional ¼ cup Parmesan cheese and ¼ cup mozzarella cheese in batches. Remove from heat. Taste and add more salt if needed. Then add in cooked pasta. Reheat on medium. If the sauce is too thick add small amount of pasta water.

Season with more salt, red pepper and basil if desired.

Ingredients

  • 8 oz fettuccine pasta
  • ½ cup cooked pasta water
  • 2 tbsp olive oil
  • 1 lb shrimp 10 big or 20 small shelled and deveined
  • 3 garlic cloves minced
  • ¼ tsp dried basil
  • ¼ tsp paprika
  • ¼ tsp salt
  • ¼ tsp red pepper flakes
  • 8 oz mushrooms thinly sliced
  • 1 cup half-n-half
  • ½ cup parmesan cheese shredded
  • ½ cup mozzarella cheese shredded

Instructions

  1. Cook pasta, reserve pasta water.
  2. Heat large skillet until hot. Add 2 tbsp olive oil, add garlic and shrimp. Cook 1 minute.

  6. Add ½ of the cheese. Bring to a boil, reduce heat to medium. Cook stirring until cheese is melted.
  7. Gradually add remaining cheese in batches. Remove from heat. Taste and add more salt if needed. Add drained pasta. Reheat on medium. If the sauce is too thick add small amount of pasta water.
  8. Season with more salt, red pepper and basil if desired.
