Impossibly Easy Banana Bread Coffee Cake

I stole this recipe for Impossibly Easy Banana Bread Coffee Cake from bettycrocker.com. This coffee cake gets some help from Bisquick mix. Bananas are mashed and mixed with sugar, milk, vegetable oil, cinnamon and eggs. Bisquick and chopped nuts are mixed into the banana mixture. The batter is poured into a casserole dish. A streusel topping is made with more bisquick, chopped nuts, brown sugar and butter. The finished coffee tastes like banana bread! This is a great breakfast treat for any banana lovers and perfect for breakfast or brunch.

In a large bowl, stir 1 ⅓ cups mashed bananas, ⅔ cups granulated sugar, ¼ cup milk, 3 tbsp vegetable oil, 1 tsp ground cinnamon and 3 eggs.

Then, stir in 2 ⅔ cups bisquick and ¾ cup nuts (walnuts or pecans).

Next, fold in 1 large sliced banana.

Finally, pour the mixture into a greased 9×13 pan.

In medium bowl, make the streusel topping. Combine together 1 cup bisquick mix, ½ cup chopped nuts (walnuts or pecans), ½ cup packed brown sugar and 6 tbsp butter. Cutting in the butter into the other ingredients with a pastry blender or fork until crumbly.

Then sprinkle the streusel topping over the mixture in the pan. Lightly press the toppings into the batter.

Next, bake at 350 F for 30-36 minutes or until a toothpick inserted in the center comes out clean. (If you get a wet spot on the toothpick, check another area just to make sure you didn’t hit a banana. You don’t want to burn the coffee cake.)

Cut slices 4×3 in pan for 12 servings (or cut smaller for more servings).

Then gently scoop out pieces and enjoy as is or with syrup or powdered sugar sprinkled on top.

Ingredients

Coffee Cake

  • 2-3 large ripe bananas mashed (about 1 ⅓ cups), plus 1 large banana, sliced
  • cups granulated sugar
  • ¼ cup milk
  • 3 tbsp vegetable oil
  • 1 tsp ground cinnamon
  • 3 eggs
  • 2 ⅔ cups bisquick mix
  • ¾ cup chopped walnuts or pecans

Streusel

  • 1 cup bisquick mix
  • ½ cup chopped walnut or pecans
  • ½ cup packed brown sugar
  • 6 tbsp butter cut into small pieces

Instructions

  1. Preheat oven to 350 F. Grease bottom and sides of 13×9 pan.
  2. In a large bowl, stir mashed bananas, granulated sugar, milk, oil, cinnamon and eggs. Stir in 2 ⅔ cups bisquick and ¾ cup nuts; fold in banana slices. Pour mixture into pan.
  3. In medium bowl, mix streusel ingredients, cutting in butter with pastry blender or fork until crumbly. Sprinkle over mixture in pan.
  4. Bake 30-36 minutes or until knife inserted in center comes out clean. Cut 4×3. Drizzle with syrup before serving.
