Caramel Churro Chex Mix

I stole this recipe for Caramel Churro Chex Mix from anaffairfromtheheart.com. This delicious snack mix is perfect for any game day or after school snack. In a saucepan melted butter cooks with brown sugar and corn syrup. Then baking soda is stirred into the pan. Next the caramel is poured over Crispix cereal and spread onto a foil lined baking sheet. Cinnamon and sugar are mixed together and sprinkled over the cereal. Then the mixture is baked in the oven for 5 minutes before being flipped and cooked 3 minutes longer. The snack mix is cooled completely before serving. This recipe can be easily be doubled and is a perfect way to take advantage of buying cereal in bulk.

The ingredients for this recipe are: 9 cups Crispix Cereal, 1 cup brown sugar, 1 stick salted butter, ¼ cup corn syrup, ¼ tsp baking soda, ⅔ cup granulated sugar and 2 tsp cinnamon

Pour cereal into a large bowl. At this step I also add 1 ½ cups peanuts.

Then in a small bowl combine cinnamon and sugar. Set aside.

In a saucepan over medium heat melt together butter, brown sugar and corn syrup.

Then cook until mixture comes to a boil. Boil for 1 minute stirring constantly.

Remove from heat and stir in baking soda. The mixture will foam up.

Pour the mixture over the cereal and carefully stir until cereal is well coated.

Spread the coated cereal evenly on the baking sheet. Sprinkle with cinnamon sugar mixture, flipping it over halfway through the mixture, to coat the other side.

Bake at 350 F for 5 minutes, flip the mixture over and bake for 3 minutes more. The cereal will be a golden brown.

Remove from oven, cool completely and serve.
