Chocolate Turtle Chex Mix

I stole this recipe for Chocolate Turtle Chex Mix from sweetphi.com. This delicious snack mix is perfect for holiday parties. In a large bowl chocolate Chex cereal and pecans are tossed together. Then in a small bowl brown sugar, butter, corn syrup and salt are mixed together and microwaved. Baking soda is added to the brown sugar mixture, then poured over the cereal mixture. Next the mixture is spread onto a baking sheet and sprinkled with chocolate chips and toffee bits. After cooling the mixture is broken into pieces and pretzels are added before serving. This snack mix is so good you won’t need other snacks.

The ingredients for this recipe are: 1 package (12.8 oz) chocolate Chex cereal. 1 cup pecan halves, ¾ cup packed brown sugar, 6 tbsp butter, 3 tbsp light corn syrup, ¼ tsp salt, ½ tsp baking soda, 1 ¼ cups semisweet chocolate chips, 12 caramel squares (or 1 cup toffee bits) and 1 ½ cup mini pretzels

Line a baking sheet with parchment paper and set aside. In a large microwave safe bowl, mix the cereal and pecans.

Then in a 2 cup glass measuring cup, combine the brown sugar, butter, corn syrup and salt; microwave, uncovered, on HIGH until smooth, stirring once, 1-2 minutes total.

Whisk the baking soda into the mixture in the measuring cup. Pour over the cereal mixture and then toss to coat.

Microwave, uncovered, on HIGH for 2 minutes, stirring every minute. Spread cereal mixture onto parchment; immediately sprinkle with chocolate and caramel or toffee bits (do not stir). Refrigerate until chocolate is set.

Break into pieces. Stir in pretzels.

Serve immediately or store in an airtight container.
