Frito Snack Mix

I stole this recipe for Frito Snack Mix from cookiesandcups.com. This crunchy snack mix is perfect for picnics and potlucks. In a large bowl Fritos, Rice Chex cereal, pretzels and nuts are mixed together and set aside. Then in a small saucepan, sugar, butter and corn syrup are boiled and then poured over the Frito mixture. Next the mixture is baked for 8 minutes, stirred and baked for 8 minutes more. The mixture is spread onto waxed paper to cool before sprinkling M&Ms on top. Once completely cooled the mixture is broken into large clumps and served. There’s a lot of crunch in this snack mix from the Fritos, cereal, pretzels and nuts; so be warned it’s not a quite snack.

The ingredients for this recipe are: 10.5 oz bag of Fritos, 2 cups Rice Chex Cereal, 2 cups Pretzel Twists, 1 ½ cup nuts (walnuts, peanuts, cashews or mixed nuts), 1 cup mini M&Ms, 1 cup light brown sugar, ½ cup butter and ½ cup light corn syrup

Preheat oven to 350 F. In a large bowl combine Fritos, Chex, pretzels and nuts. Set aside.

Then in a small saucepan melt sugar, butter and corn syrup over medium heat.

Let mixture come to a boil and then boil for 4 minutes without stirring.

Remove from heat and pour over Frito mixture, stirring to coat evenly.

Next transfer mix to a large roasting pan and bake for 8 minutes. Remove to stir and bake for an additional 8 minutes. When done baking transfer to a wax paper lined counter or baking sheet.

Sprinkle M&Ms on top when the mixture is warm but not hot so the M&Ms stick to the caramel.

Let cool completely, breaking into large clumps before serving.
