Honey Mustard Potatoes

I stole this this recipe for Honey Mustard Potatoes from eatwell101.com. This potato recipe is a delicious side dish and be served with a variety of meals. Potatoes are partially cooked in boiling water. Then the potatoes are drained and sautéed in a skillet. Next olive oil, Dijon mustard, honey, chicken broth, garlic powder, onion powder, oregano and paprika are added to the skillet. The potatoes cook in the sauce until the sauce thickens and becomes a sticky glaze on the potatoes. This recipe calls for Dijon mustard and any brand can be used, even Grey Poupon.

The ingredients for this recipe are: 1 lb mixed baby or fingerling potatoes, 2 tbsp olive oil, ¼ cup chicken broth, 1 tbsp honey, ¼ cup Dijon mustard, 1 tsp garlic powder, 1 tsp onion powder, ½ tsp dried oregano, ½ tsp paprika, salt and pepper to taste and 1 tbsp chives

Scrub potatoes. Par-cook the potatoes in a pot of salted boiling water until tender. Cook 8 to 10 minutes or tender when pierces with a fork.

In a small bowl mix together 1 tbsp olive oil, Dijon mustard, honey, chicken broth and seasonings.

Heat 1 tbsp olive oil in a large skillet and sauté the potatoes until the skin is golden brown.

Then add the mustard mixture to the potatoes.

Cook on medium-high heat until the sauce thickens and forms a sticky glaze.

Garnish potatoes with chives and serve immediately.
