This potato is a delicious side dish and be served with a variety of meals. Potatoes are partially cooked in boiling water. Then the potatoes are drained and sautéed in a skillet. Next olive oil, Dijon mustard, honey, chicken broth, garlic powder, onion powder, oregano and paprika are added to the skillet. The potatoes cook in the sauce until the sauce thickens and becomes a sticky glaze on the potatoes.

Ingredients
1lbmixed baby or fingerling potatoes
2tbspolive oil
¼cupchicken broth
1tbsphoney
¼cupDijon mustard
1tspgarlic powder
1tsponion powder
½tspdried oregano
½tsppaprika
Salt and pepper to taste
1tbspchivesgarnish
Instructions
Scrub potatoes. Par-cook the potatoes in a pot of salted boiling water until tender. Cook 8 to 10 minutes or tender when pierces with a fork.
Heat 1 tbsp olive oil in a large skillet and sauté the potatoes until the skin is golden brown. Set aside.
Add 1 tbsp olive oil, Dijon mustard, honey, chicken broth and seasonings to the potatoes. Cook on medium-high heat until the sauce thickens and forms a sticky glaze.
Garnish potatoes with chives and serve immediately.
