Onion Roasted Potatoes

 

I stole this yummy side dish recipe for onion roasted potatoes from the back of a box of Lipton Recipe Secrets Onion Soup Mix. I have made it with a variety of potatoes and I have used a variety of Lipton dried soup mixes. It’s an easy 3 ingredient recipe.

Did you know? The potato was not readily accepted in Europe because it is know to be a member of the nightshade family (as are the tomato and eggplant) and therefore thought to be poisonous. In the 16th century, Sir Walter Raleigh was instrumental in debunking the poisonous potato superstition when he planted them on property he owned in Ireland. Preheat oven to 425 F. Add 4 medium potatoes cut into large cuts (~ 2 lbs) to a 13 x 9 pan sprayed with non-stick spray.

Open 1 envelope Lipton Recipe Secrets dried Onion soup mix

Sprinkle over the potatoes and drizzle ⅓ cup olive oil.

Stir to combine

Bake stirring occasionally (I stir about every 10 minutes)

until tender and golden brown, approximately 35 minutes

Instructions

  1. Preheat oven to 425 F. Combine all ingredients in 13 x 9 pan.
  2. Bake stirring occasionally, until tender and golden brown, approximately 35 minutes.

Recipe Notes

I use 2 pounds Yukon gold potatoes instead of the russet potatoes shown on the recipe picture. Yukon golden are a pretty yellow color and when roasted become sweeter. I leave the skins on the potatoes; just make sure to scrub the potatoes before cutting. I have used dried vegetable soup instead of dried onion soup, just make sure to pick out the dried peas first; the dried peas will turn into little rocks when roasting (I learned that the hard way). Since there are 2 packets of soup in a box sometimes you have an extra packet leftover from when you bought a box for a different recipe. Save yourself a trip to the grocery store and use whatever leftover dried soup you have in the pantry.
