Smashed Cheesy Potatoes

I stole this recipe for Smashed Cheesy Potatoes from a cookbook called Celebrate Every Season with Six Sisters’ Stuff. This delicious side dish starts on the stovetop. Potatoes are boiled until tender. Then the potatoes are rolled in a mixture of oil, salt and pepper. Next the potatoes are placed on a baking sheet and flattened with a glass. The potatoes are brushed with a mixture of butter, black pepper, garlic and Old Bay seasoning. After baking for 5 minutes, the potatoes are sprinkled with chives and shredded cheese, then returned to the oven until the cheese is melted and bubbly. Another delicious potato recipe that is good way to eat carbohydrates.

The ingredients for this recipe are: 2 lbs baby Yukon gold potatoes, 3 tbsp butter, ¼ tsp black pepper, 3 cloves garlic, 1 tsp Old Bay Seasoning, 3 tbsp olive oil, salt, pepper, 2 tbsp chopped chives and 1 cup shredded Colby Jack Cheese

Preheat oven to 450 F. Rinse and gently scrub potatoes. Cook potatoes in boiling water until fork tender, 15 to 20 minutes.

In a small microwave safe bowl combine butter, black pepper, garlic and Old Bay Seasoning. Heat on high for 60 seconds, until butter is melted. Mix well.

Drain potatoes and gently pat dry. Mix the olive oil, salt and pepper in a medium bowl. Roll each potato in the oil until coated.

Place potatoes on rimmed baking sheets and flatten each with the bottom of a drinking glass.

With a pastry brush, coat each potato with butter mixture.

Bake 5 minutes. Remove from oven, sprinkle with half of the chives and all of the cheese, followed by all of the chives.

Serve warm.
