Cinnamon Apple Baked Oatmeal

I stole this recipe for Cinnamon Apple Baked Oatmeal from savorynothings.com. This delicious breakfast recipe is prepared the night before. Uncooked oats are mixed with cinnamon, baking powder and salt. Then milk, applesauce, eggs, maple syrup and vanilla are mixed in before adding chopped apples and pecans. Next the oat mixture is spread into a greased baking pan. The dish is covered and refrigerated overnight. In the morning the casserole is baked until golden. The cooked oatmeal is soft and tender, not the gummy, pasty oatmeal that some people hate.

The ingredients for this recipe are: 3 cups old fashioned oats, 2 tsp cinnamon, 1 tsp baking powder, ¼ tsp salt, 1 cup milk, 1 cup unsweetened applesauce, 2 large eggs, ½ cup maple syrup or brown sugar, 2 tsp vanilla extract, 2 cups chopped apples and ½ cup chopped pecans

Chop the pecans and set aside.

Then chop the apples and place in a bowl of water to prevent browning.

Next in a separate bowl add the oats, cinnamon, baking powder and salt to a mixing bowl and stir to combine.

After mixing, add the milk, applesauce, eggs, maple syrup and vanilla and stir very well to break up the eggs.

Then drain the apples and fold into the mixture with the chopped pecans.

Lightly grease a 9×13 baking pan and spread the oat mixture in it. Cover the casserole dish and refrigerate overnight.

Remove the dish from the refrigerator. Preheat oven to 350 F. Bake until set and golden on top, about 35-40 minutes.

Rest the casserole dish for 5-10 minutes, then slice and serve.
