This delicious breakfast recipe is prepared the night before. Uncooked oats are mixed with cinnamon, baking powder and salt. Then milk, applesauce, eggs, maple syrup and vanilla are mixed in before adding chopped apples and pecans. Next the oat mixture is spread into a greased baking pan. The dish is covered and refrigerated overnight. In the morning the casserole is baked until golden.

3cupsold fashioned oats
2tspcinnamon
1tspbaking powder
¼tspsalt
1cupmilk
1cupunsweetened applesauce
2large eggs
½cupmaple syrup or brown sugar
2tspvanilla extract
2cupschopped apples
½cupchopped pecans
Instructions
Add oats, cinnamon, baking powder and salt to a mixing bowl and stir to combine. Add the milk, applesauce, eggs, maple syrup and vanilla and stir very well to break up the eggs. Fold in the apples and pecans.
Lightly grease a 9x13 baking pan and spread the oat mixture in it.
Cover the casserole dish and refrigerate overnight.
Remove the dish from the refrigerator. Preheat oven to 350 F. Bake until set and golden on top, about 35-40 minutes. Rest the casserole dish for 5-10 minutes, then slice and serve.
