Cracked Out Hash Brown Casserole

I stole this recipe for Cracked Out Hash Brown Casserole from plainchicken.com. This tasty breakfast casserole starts with cooking bacon. Once the bacon is cooked, shredded hash browns are added to the pan and cooked until light brown. Then the hash browns are placed in a baking dish and topped with bacon and shredded cheddar cheese. Next a mixture of eggs, dry ranch dressing mix and milk is poured on top. The casserole is baked until the cheese is melted and the top is golden brown. Making this breakfast recipe is another great way to eat more potatoes!

In a skillet, cook 2 lbs bacon until crispy. Remove from pan and chop. Leave drippings in pan.

Preheat oven to 350 F. Spray 9×13 baking pan. Then add a 30-32 oz bag of shredded hash browns to skillet and cook until light brown.

Once brown, place in prepared dish.

Top with bacon and 2 cups shredded cheddar cheese.

Then in a small bowl whisk together 8 eggs, 1 oz packet dry ranch dressing mix and 2 cups milk. Pour over hash brown mixture in pan.

Bake uncovered for 60-70 minutes.

  • 2 lbs bacon
  • 30-32 oz bag frozen shredded hash browns thawed
  • 1 oz packet dry ranch dressing mix
  • 2 cups shredded cheddar cheese
  • 8 eggs
  • 2 cups milk

Instructions

  1. Preheat oven to 350 F. Spray 9×13 baking pan.
  2. In a skillet, cook bacon until crispy. Remove from pan and chop. Leave drippings in pan.
  3. Add hash browns to skillet and cook until light brown. Place in prepared dish. Top with bacon and cheese.
  4. Whisk together eggs, ranch dressing mix and milk. Pour over hash brown mixture in pan.
  5. If preparing ahead of time, cover and refrigerate at this point.
  6. Bake uncovered for 60-70 minutes.

Recipe Notes

Can use 2 cups pre-cooked bacon. Can freeze. Thaw completely. Cover with foil and bake at 350 F for 30-40 minutes until warm. (I only used 1 lb of bacon.)
