Mixed Berry Baked Oatmeal Muffins

These oatmeal muffins get a lot of flavor from a mixture of fruit. To start the muffins, oats are mixed with baking powder, cinnamon and salt. Then milk, honey, eggs and vanilla are added in next. Mashed bananas, mixed berries and chopped nuts are folded in before the batter is scooped into muffin cups. These muffins are then baked until golden brown. A delicious breakfast or snack time treat for anyone who loves muffins!

For this recipe you will need: 2 cups quick cooking oats, ¾ tsp baking powder, 1 tsp cinnamon, ¼ tsp salt, 1 ¼ cups milk, 2 medium mashed bananas, 1 beaten egg, 2 tsp vanilla extract, 2 tbsp honey, 1 tbsp melted butter, 1 ½ cups mixed berries, ¼ cup chopped walnuts.

Preheat oven to 375 F. Start with the dry ingredients first, in a medium bowl, mix together the oats, baking powder, cinnamon and salt.

Then in a large measuring cup, whisk together the milk, honey, eggs and vanilla. Next, add the liquid mixture to the dry ingredients in the bowl and stir just to combine. Drizzle in the butter while stirring, and then add the mashed bananas, berries and nuts.

Gently fold the fruit into the muffin mixture. It is okay if the mixture looks soup, the oats will absorb a lot of the liquid when baking.

At this time, spray 12 cup muffin tin with cooking spray. Distribute batter evenly into the tins.

Finally, bake for 17-20 minutes or until the oatmeal starts to brown and a toothpick inserted in the center comes out mostly clean. Let cool 10-15 minutes before removing from pan and then serve.
