November 3rd is National Sandwich Day and making Crock Pot BBQ Pulled Chicken is a great way to celebrate (to see more Food Holidays see the National Food Holidays category or look at the Food Holiday Calendar).

The key to this recipe is the sauce, the ingredients are: 2 cups BBQ sauce (Sweet Baby Ray’s), ¼ cup light brown sugar, 2 tbsp apple cider vinegar, 1 tbsp olive oil, 1 tsp garlic powder, ½ tsp onion powder, ½ tsp smoked paprika and ¼ to ½ tsp crushed red pepper.

Start with adding the sauce ingredients to a slow cooker. (Any sweet thicker BBQ sauce can work, if Sweet Baby Ray’s is unavailable.)

Stir the ingredients together and then add 3.5 lb boneless skinless chicken breasts, spoon the sauce to cover chicken.

Then cover and cook on LOW for 6-7 hours or on HIGH for 3-4 hours.

Next, remove the chicken and shred. Then add chicken back to the slow cooker.

Stir well to coat chicken with BBQ sauce and then serve on a bun.
