Crock Pot BBQ Pulled Chicken

This tasty sandwich filling is made in a slow cooker. BBQ sauce is mixed with brown sugar, apple cider vinegar, olive oil, garlic powder, onion powder, smoked paprika and crushed red pepper. Then chicken breasts are placed in the sauce and cooked for several hours. After cooking the chicken is removed and shredded and added back to the sauce. The sandwich is finished by serving the chicken and sauce on a bun.

Ingredients

  • 3.5 lb boneless skinless chicken breasts
  • 2 cups BBQ sauce Sweet Baby Ray’s
  • ¼ cup light brown sugar
  • 2 tbsp apple cider vinegar
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp smoked paprika
  • ¼ to ½ tsp crushed red pepper
  • 8 rolls or hamburger buns

Instructions

  1. Combine BBQ sauce, brown sugar, apple cider vinegar, olive oil, garlic powder, onion powder, smoked paprika and crushed red pepper in slow cooker.
  2. Place chicken in sauce, spoon sauce to cover chicken.
  3. Cover and cook on LOW 6-7 hours or on HIGH 3-4 hours.
  4. Shred chicken, stir well to coat with BBQ sauce.
