Slow Cooker Crack Chicken

 

I stole this recipe from Brandi Burgess at Auntbeesrecipes.com who stole it from cookiesandcups.com. The slow cooker does all the work for you on this yummy recipe for Slow Cooker Crack Chicken. Chicken is placed in a slow cooker. Ranch dressing mix is sprinkled on top and dotted with cream cheese. Chicken is shredded after cooking and placed back in the slow cooker. Mayonnaise, bacon and cheddar cheese are mixed in and cooked until the cheese melts. After mixing in green onions, this sandwich is ready to serve on a bun with lettuce and tomatoes, it is addicting!

Place 4 chicken breasts in slow cooker. Sprinkle with 1 oz package ranch dressing mix and place 8 oz cream cheese on top.

Cook on LOW 6 hours. Near the end of the cooking time, cook 1 lb bacon, crumble or cut into bite size pieces.

After 6 hours, remove chicken from slow cooker and shred. Set shredded chicken aside. Add 1 cup mayonnaise to the sauce remaining in the slow cooker.

Stir the mayonnaise into the sauce, then add in the bacon.

Add the shredded chicken to the slow cooker, stirring to combine.

Sprinkle with 2 cups shredded cheddar cheese. Recover the slow cooker and cook on LOW for 15 more minutes or until cheese is melted. Top with a handful of chopped green onions.

Stir to combine cheese and green onions with chicken mixture. You can eat this with a spoon or spread on crackers or serve on a bun.

This sandwich is good as is, or you can serve with lettuce and sliced tomato.

Ingredients

  • 4 chicken breasts
  • 1 package (1 oz) ranch dressing mix
  • 8 oz cream cheese
  • 1 cup mayonnaise
  • 1 lb bacon cooked and crumbled
  • 2 cups shredded cheddar cheese
  • Big handful of chopped green onions

Instructions

  1. Place chicken breasts in crock pot. Sprinkle with ranch dressing mix and place cream cheese on top. Cook on LOW 6 hours. Remove chicken and shred chicken with 2 forks and add it back to the slow cooker and stir in mayonnaise and cooked bacon and sprinkle with cheese. Replace lid and cook on LOW for 15 more minutes or until cheese is melted. Top with green onions and serve on rolls or crackers.

Recipe Notes

You can also substitute reduced fat cream cheese and cheddar cheese. Serve this on rolls with lettuce and sliced tomato. It’s messy, but yummy!
