Brookies

I stole this recipe for Brookies from creationsbykara.com. These tasty cookies are half chocolate chip cookie and half brownie. Brownie dough is made first and cooled in the refrigerator while making the chocolate chip cookie dough. Mini chocolate chips are the only change made to the basic chocolate chip dough. Both types of dough are rolled into small dough balls. Then a dough ball of each batter type is pressed together to make the half and half cookie. The baked cookie is called a brookie, I don’t know why that was picked over chocownie, chipnie or another name. Whatever you call it; these cookies are the perfect combo.

Start with the brownie part first. Cream ½ cup + 2 tbsp butter, ⅔ cup granulated sugar and ⅔ cup brown sugar together in a large mixing bowl. Then add 1 egg, 1 egg yolk and 1 tsp vanilla and beat until creamy, about 2 minutes.

Next, combine 1 ¼ cup + 3 tbsp flour, ½ cup cocoa, 1 tsp baking soda, ½ tsp baking powder and ½ tsp salt in a small bowl. Sift into sugar mixture. Stir until dough is just combined. Cover and refrigerate.

Then start the chocolate chip cookie dough. Cream ½ cup + 2 tbsp butter, ⅔ cup granulated sugar and ⅔ cup brown sugar together in a large mixing bowl. Add 1 egg, 1 egg yolk and 1 tsp vanilla and beat until creamy, about 2 minutes.

Next, whisk 2 cups + 2 tbsp flour, 1 tsp baking soda, ½ tsp baking powder and ½ tsp salt in a small bowl. Add to the sugar mixture with 1 cup mini chocolate chips. Stir until the ingredients are well mixed.

Take a small portion of brownie dough and roll into a ball. Then, take a small portion of chocolate chip dough into a ball. Lightly smash the balls together and form a larger ball of dough. Place on a lightly greased cookie sheet. Flatten slightly with hand.

Bake at 350 F for about 10 minutes. Cool on pans for 2-3 minutes, and then remove to cooling racks to cool completely.

Instructions

Brownie

  1. Cream butter and sugars together in a large mixing bowl. Add the egg, yolk and vanilla and beat until creamy, about 2 minutes.
  2. Combine flour, cocoa, baking soda and powder and salt in a small bowl. Sift into sugar mixture. Stir until dough is just combined. Cover and refrigerate while preparing chocolate chip dough.

Chocolate Chip dough

  1. Cream butter and sugars together in a large mixing bowl. Add the egg, yolk and vanilla and beat until creamy, about 2 minutes.
  2. Whisk flour, baking soda and powder and salt in a small bowl. Add to the sugar mixture with chocolate chips. Stir until the ingredients are well mixed.

Brookies

  1. Take a small portion of brownie dough and roll into a ball. Take a small portion of chocolate chip dough into a ball. Lightly smash the balls together and form a larger ball of dough.
  2. Place on a lightly greased cookie sheet. Flatten slightly with hand.
  3. Bake at 350 F for about 10 minutes. Cool on pans for 2-3 minutes, and then remove to cooling racks to cool completely.
