Easy Rotel Mexican Rice

I stole this recipe for Easy Rotel Mexican Rice from quickmealrecipe.com. This easy to make rice recipe is a perfect side. Long grain rice is toasted in a skillet with olive oil. Then a can of Rotel tomatoes, vegetable broth, garlic powder, onion powder, salt and pepper are added to the rice. Next the broth is brought to boil, then covered. The rice is covered and cooked until the liquid is absorbed. Shredded cheese is stirred in until melted. The secret ingredient for this recipe is canned Rotel tomatoes.

The ingredients for this recipe are: 2 cups long grain rice, 1 can Rotel tomatoes, 2 cups chicken or vegetable broth, 1 cup shredded Mexican cheese, 1 tsp olive oil, 1 tsp garlic powder, 1 tsp onion powder, Salt, Pepper, 1 cup corn and chopped onion

In a large skillet, heat olive oil over medium heat. Then add rice and sauté until lightly toasted.

In this step I also add corn and chopped onion.

Stir in tomatoes, broth, garlic powder, onion powder, salt and pepper.

Bring to a boil, then reduce heat to low and cover. Cook for 20 to 25 minutes, or until rice is tender and liquid is absorbed.

Remove from heat, stir in shredded cheese until melted.

Scoop out and serve.
