Creamy Four Cheese Garlic Spaghetti

I stole this recipe for Creamy Four Cheese Garlic Spaghetti from therecipesday.blogspot.com. This tasty pasta has, you guessed it, four types of cheese in the recipe. Minced garlic is cooked in olive oil and butter. A bouillon cube is dissolved in a cup of pasta water. The seasoned water plus heavy cream and cooked spaghetti are added to the cooked garlic. Once the mixture is boiling, a four cheese blend of shredded cheese is added in and stirred until melted. The bouillon cube is the secret ingredient that adds some extra flavor to the pasta.

Heat 1 tbsp olive oil and 1 tbsp butter on medium heat in a large skillet, add 5 cloves of minced garlic and cook for 1 minute without burning.

Then cook 8 oz spaghetti and drain, reserving 1 cup pasta water.

Next dissolve 1 chicken bouillon cube in the cup of hot pasta water. (If you don’t have any bouillon cubes you can use a packet of Ramen noodle seasoning.)

Then add the flavored water, 1 cup heavy cream and cooked spaghetti to the skillet.

Bring to a boil, stirring occasionally. Once boiling, add 1 ½ cups four cheese blend (mozzarella, white cheddar, provolone, asiago) and keep stirring until cheese melts and coats pasta, for about 1 minute.

Then reduce the heat to a simmer and cook while stirring to thicken for another minute or two. Sprinkle with parsley.

Then scoop out of the skillet and serve with additional parsley if desired.

Or you can serve with a main entree. I recommend serving with Roasted Eggplant Parmesan.

  • 1 ½ cups four cheese blend mozzarella, white cheddar, provolone, asiago
  • ¼ cup parsley finely chopped

  4. Serve with parsley.

Recipe Notes

You can substitute a packet of Ramen noodle seasoning mix for a bouillon cube.
