Cheesy Orzo

 

I stole this recipe for Cheesy Orzo from foodnetwork.com who stole it from Rachel Ray (30 Minute Meals). This pasta side dish is quick and easy to make, all in one pot! Onion and garlic are cooked in oil, and then broth is added to the pot. Once the broth boils, orzo is added. After all the broth is absorbed cheese is mixed in. Cooking the orzo in broth instead of just water adds more flavor to this recipe of Cheesy Orzo.

Preheat an 8 inch pot with a tight fitting cover over medium heat. Add 2 tbsp olive oil, ½ small chopped onion and 2 cloves chopped garlic and sauté for 2 to 3 minutes.

To the onions and garlic, add 2 cans (14 oz) chicken or vegetable broth or stock.

Bring to a boil. Pour in 2 cups orzo pasta.

Stir together and return broth to boil. Cover pot and reduce heat to simmer. Cook 15 minutes, stirring occasionally, or until liquid is absorbed and pasta is tender.

Season with salt and pepper to taste and ½ cup grated Parmesan or Romano.

Stir together and serve.
