Brie Spaghetti

I stole this recipe for Brie Spaghetti from lissakitchens.blogspot.com who stole it from delish.com (she even stole the pictures!). This is a cheese lover’s spaghetti dish! A wheel of brie is baked in the oven until it is bubbly and melted. While the brie cooks, cooked spaghetti is tossed with olive oil, garlic, parsley and red pepper flakes. The melted brie is tossed with the spaghetti and served with grated Parmesan cheese. You won’t believe how amazing this dish tastes!

This recipe called for a 35 oz wheel brie (large wheel) which is VERY expensive. So I cut this recipe and served it as a side dish. If you quarter the recipe it would call for 8.75 oz of brie, a small wheel of brie is normally 8 oz.

Preheat oven to 350 F. Cut off the top peel of the brie then place in the center of an oven safe skillet. (I used a pie plate since I was using the smaller wheel.)

Bake until bubbly and melted, about 25 minutes.(Time may vary depending on wheel size, start checking at 15 minutes.) Cook spaghetti in a large pot of salted boiling water. Save 1 cup pasta water, drain and transfer to a large bowl or skillet. Toss spaghetti with 2 tbsp olive oil, 3 minced garlic cloves, ¼ cup chopped parsley and a pinch of red pepper flakes. Season to taste with salt.

Check if brie is ready to remove from oven, it should be bubbly and melted.

After removing brie from oven, immediately add to the spaghetti.

Toss to coat spaghetti with the brie. If brie is too thick, gradually add pasta water to loosen.

Serve with Parmesan cheese.

Recipe Notes

Since it is so expensive to buy a large wheel, I cut this recipe and served it as a side dish. If you quarter the recipe it would call for 8.75 oz of brie, a small wheel of brie is normally 8 oz. To quarter the recipe use: 8.75 oz brie, 6 oz spaghetti, ½ tbsp olive oil, 1 garlic clove, 1 tbsp chopped parsley, pinch red pepper flakes and 1 tbsp parmesan cheese. I cooked the brie in a pie plate, and mixed the spaghetti in a skillet instead of a bowl.
