Roasted Zucchini with Parmesan

I stole this recipe for Roasted Zucchini with Parmesan from theforkedspoon.com. This is a quick and easy way to make a vegetable side dish. Zucchini is sliced into rounds. Then the zucchini is drizzled with olive oil and seasoned with salt, pepper, garlic powder, paprika and Parmesan cheese. Next the zucchini is placed in a single layer on a baking sheet. Additional Parmesan cheese is sprinkled on top before roasted the zucchini in the oven. This recipe is so tasty even someone who doesn’t like vegetables will like it.

The ingredients for this recipe are: 2 lbs zucchini, 1 tbsp olive oil, 1 tsp salt, ½ tsp black pepper, ½ tsp garlic powder, ¼ tsp paprika and ¾ cup grated Parmesan cheese

Slice the zucchini into ½ inch thick rounds.

Drizzle with olive oil and then season with salt, black pepper, garlic powder, paprika and ¼ cup grated Parmesan cheese.

Gently toss zucchini to coat. Arrange zucchini on baking sheets lined with foil in a single layer. Top with remaining grated Parmesan cheese.

Cook zucchini on the center rack at 450 F for 6 to 8 minutes. Then broil for 2 minutes or until cheese is golden brown.

Garnish with parsley. Best served immediately.
