Zucchini Squares

I stole this recipe for Zucchini Squares from about.com who stole it from Diana Rattray. Boxed biscuit mix helps make this recipe quick and easy to prepare. Thinly sliced zucchini is mixed with biscuit mix, spices, chopped onions and Parmesan cheese. Beaten eggs and vegetables are stirred in before the mixture is spread into a sprayed baking dish. After baking these tasty zucchini squares can be served as an appetizer or side dish. This recipe is another tasty way to serve vegetables, even for people who have no more room for vegetables.

For this recipe you will need 3 cups thinly sliced zucchini, 1 cup biscuit mix, ½ cup finely chopped onion, ¼ tsp dried oregano, ¼ tsp black pepper, ½ tsp salt, dash of garlic powder, 2 tbsp chopped fresh parsley, ½ cup grated Parmesan cheese, ¼ cup vegetable oil and 4 eggs.

Combine sliced zucchini (leave the peel on the zucchini) in a large bowl with biscuit mix, chopped onion, oregano, pepper, salt, garlic powder, parsley and Parmesan cheese.

Then toss to coat the zucchini with the dry ingredients. Make sure all the zucchini are covered.

Next add the beaten eggs and vegetable oil. The original recipe called for everything to mixed together at once.

Pour mixture into a sprayed 13×9 baking dish. Spread evenly to cover the bottom of the pan.

Then bake in an oven at 350 F for 30 minutes or until lightly browned. Insert a knife in the center.

Cool slightly then cut into squares and serve as an appetizer or side dish. These squares also taste good cold or room temperature, perfect for leftovers.
