Breaded Baked Zucchini

I stole this recipe for Breaded Baked Zucchini from Michelle De La Cerda from Thecompletesavorist.com, the original recipe was for mushrooms but I substituted zucchini. Zucchinis cut into strips are breaded in a mixture of Panko bread crumbs, garlic, onion and other seasonings. The breaded zucchini strips are then baked in the oven. These are great as an appetizer or as a vegetable side dish. You can the bread zucchini strips in advance and bake when ready, they are great with homemade ranch dressing.

Preheat oven to 450 F. Cut 3 medium zucchinis into strips, set aside. Mix 1 ½ cups panko breadcrumbs, 1 tbsp granulated garlic, ½ tsp onion powder, ½ tsp black pepper, ¾ tsp salt, ¼ cup AP flour and 1 tbsp (heaping) dried parsley in a bowl.

In a separate bowl beat 3 eggs and dip zucchini strips in, one at a time.

Then place zucchini strip in breading bowl.

Roll zucchini in breading until all sides are coated.

Place breaded zucchini on baking sheet lined with parchment. Repeat until all are breaded.

Spray zucchinis generously with cooking spray. Bake 7 minutes. Remove from oven and turn each zucchini over, spray again with cooking spray and resume baking, an additional 5-8 minutes or until golden. (Depending on size of zucchini, you may need an additional 5 or more minutes of cooking.)

Serve the breaded baked zucchini warm.

Don’t forget the ranch dressing for dipping.

  • 3 medium zucchinis
  • 3 eggs

Breading

  • 1 ½ cups panko breadcrumbs
  • 1 tbsp granulated garlic
  • ½ tsp onion powder

  • ¼ cup AP flour
  • 1 tbsp heaping dried parsley
  • Cooking spray

Instructions

  1. Preheat oven to 450 F.
  2. Line baking sheet with parchment, wash zucchini and cut into strips.
  3. Mix breading ingredients in a bowl.
  4. Beat eggs and dip the zucchini strips in one at a time.
  5. Roll 1 zucchini strip at a time in the breading and place on baking sheet.
  6. Repeat until all are breaded.
  7. Spray zucchinis generously with cooking spray.
  8. Bake 7 minutes.
  9. Remove from oven and turn each zucchini strip over, spray again with cooking spray and resume baking, an additional 5-8 minutes or until golden.

Recipe Notes

I add a few tablespoons of grated Parmesan cheese to breading. Depending on size of zucchini, you may need an additional 5 or more minutes of cooking.
