This is a quick and easy way to make a vegetable side dish. Zucchini is sliced into rounds. Then the zucchini is drizzled with olive oil and seasoned with salt, pepper, garlic powder, paprika and Parmesan cheese. Next the zucchini is placed in a single layer on a baking sheet. Additional Parmesan cheese is sprinkled on top before roasted the zucchini in the oven.

2lbszucchinicut into ½ inch thick rounds
1tbspolive oil
1tspsalt
½tspblack pepper
½tspgarlic powder
¼tsppaprika
¾cupgrated Parmesan cheese

Instructions
Preheat oven to 450 F. Line 2 baking sheet with foil. Set aside.
Transfer the zucchini to a large bowl. Drizzle with olive oil and season with salt, black pepper, garlic powder, paprika and ¼ cup grated Parmesan cheese. Gently toss zucchini to coat.
Arrange zucchini on baking sheets in a single layer. Top with remaining grated Parmesan cheese.
Cook zucchini on the center rack for 6 to 8 minutes. Then broil for 2 minutes or until cheese is golden brown.
