Zucchini Patties

I stole this recipe for Zucchini Patties from tasteofhome.com who stole it from Annabelle Cripe from Goshen, Indiana. These delicious vegetable patties are a perfect side dish or delicious on their own. Shredded zucchini is mixed with cheddar cheese, baking mix, onion, salt, basil and pepper. Then beaten eggs are stirred in and the mixture is shaped into patties. Next butter is melted in a skillet and the patties are cooked until brown on both sides. This recipe is another delicious recipe to use up your favorite summer vegetable.

The ingredients for this recipe are: 2 cups shredded zucchini, ½ cup shredded cheddar cheese, ⅓ cup biscuit/baking mix, 2 tbsp grated onion, ½ tsp salt, ½ tsp dried basil, ¼ tsp pepper, 2 large eggs and 2 tbsp butter.

Shred the zucchini and press out as much water as you can.

Then in a bowl, combine zucchini, cheese, baking mix, onion, salt, basil and pepper. Bisquick baking mix can be used or a generic alternative.

Next gently stir together the ingredients trying to coat the zucchini with the baking mix, then stir in eggs and mix well.

Shape into 6 patties, using ¼ cup of zucchini mixture for each patty. In a skillet over medium-high heat, melt butter; add the patties.

Cook patties until lightly browned, 4-5 minutes on each side.

Sprinkle with salt and serve warm.

  • 2 large eggs room temperature, lightly beaten
  • 2 tbsp butter
