Zucchini Patties

These delicious vegetable patties are a perfect side dish or delicious on their own. Shredded zucchini is mixed with cheddar cheese, baking mix, onion, salt, basil and pepper. Then beaten eggs are stirred in and the mixture is shaped into patties. Next butter is melted in a skillet and the patties are cooked until brown on both sides.

Ingredients

  • 2 cups shredded zucchini
  • ½ cup shredded cheddar cheese
  • cup biscuit/baking mix
  • 2 tbsp grated onion
  • ½ tsp salt
  • ½ tsp dried basil
  • ¼ tsp pepper
  • 2 large eggs room temperature, lightly beaten
  • 2 tbsp butter

Instructions

  1. n a bowl, combine first seven ingredients. Stir in eggs; mix well. Shape into 6 patties, using ¼ cup of zucchini mixture for each patty.
  2. In a skillet over medium-high heat, melt butter; cook patties until lightly browned, 4-5 minutes on each side.
