4 Ingredient Banana Bread

This delicious hack for banana bread starts with cake mix. Yellow cake mix is combined with mashed bananas, eggs and chopped nuts. The batter is transferred to a loaf pan. Then baked until golden brown. This recipe is quick and easy to make, perfect for beginning bakers and a great way to use up ripe bananas.

Ingredients

  • 3 to 4 very ripe bananas
  • 1 box (15.25 oz) yellow cake mix
  • 2 large eggs
  • Pecans

Instructions

  1. Mash bananas to yield 1 ½ cups.
  2. Mix mashed bananas with cake mix and 2 eggs. Mix well.
  3. Transfer batter to greased 9x5” loaf pan. Bake at 350 F for 45 minutes, until toothpick comes out clean.
  4. Cool in pan for 10 minutes then cool on wire rack.

Recipe Notes

To ripen bananas in oven bake at 300 F for 30 to 40 minutes until blackened and soft to touch. Line baking sheet with parchment or foil. Cool then mash bananas.
