Spinach Mushroom Orzo Recipe

Then butter and orzo are added to the skillet and cooked until the orzo is toasted. Next broth is added and the brought to a boil until the pasts is tender and most of the broth has been absorbed. The ingredients for this recipe are: 3 tbsp butter, 12 oz baby bello mushrooms, 1 tsp minced garlic, 2 cup dried orzo, 3 cups vegetable or chicken broth, ½ cup shredded Parmesan cheese, 2 cups baby spinach, salt, pepper and garlic powder

Clean and sliced mushrooms, then set aside.

In a large skillet over medium-high heat, melt 1 tbsp butter. Then add mushrooms and minced garlic and cook, stirring often until mushrooms are softened and browned.

Lower heat to medium heat, add 2 tbsp butter and orzo.

Next cook and stir until the pasta starts to turn a light golden brown (a few minutes).

Add vegetable or chicken broth and bring mixture to a boil, stirring occasionally. Turn down to a simmer and continue stirring until pasta is tender and liquid is mostly absorbed, about 10 minutes.

Remove from heat, and then add parmesan cheese and spinach, stirring until cheese is melted and spinach is wilted. Sprinkle with salt, pepper and garlic powder.

Serve warm.
