Easy Chicken and Broccoli Casserole

I stole this recipe for Easy Chicken and Broccoli Casserole from sixsistersstuff.com. This easy to make casserole is perfect for a weeknight meal. Broccoli is cooked in boiling water until tender. Then cream of chicken soup, sour cream, lemon juice and seasoning are mixed together in a bowl. Next the broccoli is added to a casserole dish with cooked chicken. The soup mixture is poured over the broccoli and chicken. Shredded cheese is sprinkled on top with bread crumbs before baking. Cooking the broccoli before adding to the casserole saves baking time when dinner needs to get on the table quickly.

Start this recipe by cooking 3 boneless, skinless chicken breasts then cube the cooked chicken and set aside.

Preheat oven to 350 F. Cook 4 cups chopped broccoli in boiling water (or in the microwave), until tender, then drain. Then in a greased 9×13 baking dish add broccoli and chicken.

Next in a bowl combine 10.5 oz cream of chicken soup, ½ cup sour cream, 1 tsp lemon juice and ½ tsp curry powder (or substitute chicken seasoning).

Next pour the soup mixture over top of the chicken and broccoli and mix together. Sprinkle with ¾ cup shredded cheddar cheese.

Combine ½ cup soft bread crumbs and 2 tbsp melted butter and sprinkle on top.

Bake for 25 to 30 minutes.

Scoop out and serve!

Ingredients

  • 10.5 oz cream of chicken soup
  • ½ cup sour cream
  • 1 tsp lemon juice
  • ½ tsp curry powder
  • 4 cups fresh broccoli chopped
  • 3 boneless, skinless chicken breasts, cooked and cubed
  • ¾ cup shredded cheddar cheese
  • ½ cup soft bread crumbs
  • 2 tbsp butter melted

Instructions

Recipe Notes

I substitute chicken seasoning for the curry powder. Frozen broccoli can be substituted for fresh, cook based on bag directions.
