Italian Sausage Soup with Orzo

For this recipe you will need: ½ lb Italian sausage, 1 tsp olive oil, ½ red onion, 3 cloves garlic, 2 stalks celery, ½ cup uncooked orzo pasta, 6 cups chicken broth, 15 oz can diced tomatoes, 1 tsp dried Italian seasoning, 1 tsp salt and black pepper to taste.

Prep the vegetables first, dice the celery and onions, then mince the garlic. Set aside.

Turn on your pressure cooker, select sauté. When hot add the sausage and cook through, stirring as needed.

Then transfer the sausage to a plate and set aside.

Next, add the onion, celery and garlic to the instant pot and sauté until tender, stirring as need, about 3 minutes.

Add the uncooked orzo, chicken broth, diced tomatoes, seasonings and cooked sausage.

Press the cancel function. Secure lid and turn the pressure release value setting to sealing position. Then select manual and set the instant pot on manual for 1 minute high pressure. When timer goes off, release the pressure. Select “keep warm” and serve.

Instructions

Instant pot

  1. Select sauté. When hot add the sausage and cook through, stirring as needed. Transfer to a plate and set aside. Use the sausage fat or drain and add a little oil to the Instant pot.
  2. Add onion, celery and garlic to the instant pot and sauté until tender, stirring as need, about 3 minutes.
  3. Add the uncooked orzo, chicken broth, diced tomatoes, seasonings and cooked sausage.
  4. Press the cancel function.
  5. Secure lid and turn the pressure release value setting to sealing position.
  6. Select manual and set the instant pot on manual for 1 minute high pressure.
  7. When timer goes off, release the pressure. Allow the pressure cooker to fully release the pressure until the “float valve” drops before opening the lid. Select “keep warm” and serve.

Stove top

  1. Heat a 4 quart soup pot on medium heat.
  2. Add sausage, break into small pieces; brown the sausage, stirring as needed; transfer to plate and set aside.
  3. Add the onion, garlic and celery; sauté until fragrant and tender, stirring as needed (3-4 minutes).
  4. Add dry orzo, sauté until toasted and fragrant (2-3 minutes); stirring as needed.
  5. Add the chicken broth, diced tomatoes with juice, Italian seasoning, salt, pepper and browned sausage.
  6. Bring soup to a boil; then reduce heat to medium-low and simmer until orzo is cooked 10-15 minutes. Serve warm.
