Linda’s Best Marinated Chicken

I stole this recipe for Linda’s Best Marinated Chicken from a cookbook called Taste of Home: Backyard Barbecues who stole it from Linda Pace from Lees Summit, MO. This delicious marinade can be used to grill a whole chicken or chicken breasts. Olive oil, red wine vinegar, lemon juice, soy sauce, Worcestershire sauce, ground mustard, pepper and garlic are mixed together. Then part of the marinade is used to marinate the chicken, the remainder is saved for grilling. After the chicken marinates it is placed on a warm grill. Next the reserved marinade is use to baste the chicken while cooking. The cooked chicken is tender and delicious, a perfect way to start grilling this summer.

The ingredients for the marinade are: 1 ¼ cups olive oil, ½ cup red wine vinegar, ⅓ cup lemon juice, ¼ cup soy sauce, ¼ cup Worcestershire sauce, 2 tbsp ground mustard, 1 tbsp pepper and 3 minced garlic cloves

Then whisk the marinade ingredients together in a bowl or use a blender if desired.

Then pour 2 cups marinade into plastic bag. Next add the chicken, seal and turn to coat. Refrigerate 4 hours or overnight. Cover and refrigerate remaining marinade.

Remove chicken from marinade. Grill covered over medium heat 40 to 45 minutes (if using whole chicken) or until juices run clear. For chicken breasts, grill 5 minutes per side until juices run clear.

Turn and baste chicken with reserved marinade while cooking.

Serve warm from the grill and enjoy!

  • 1 ¼ cups olive oil

  • 3 to 4 lbs whole chicken

Instructions

  1. Process marinade in blender, until mixed. Pour 2 cups marinade into plastic bag. Add the chicken, seal and turn to coat. Refrigerate 4 hours or overnight. Cover and refrigerate remaining marinade.
  2. Remove chicken from marinade. Grill covered over medium heat 40 to 45 minutes or until juices run clear. Turn and baste chicken with reserved marinade while cooking.

Recipe Notes

I use chicken breasts instead of a whole chicken. Cook the chicken breasts 5 minutes per side, basting while cooking until juices run clear.
