Strawberry Cheesecake French Toast Casserole

I stole this recipe for Strawberry Cheesecake French Toast Casserole from momontimeout.com. This tasty breakfast casserole is actually made with tiny sandwiches. A cream cheese mixture is spread on sliced bread, and then strawberries go on top before another slice of bread finishes the sandwich. The sandwiches are cut into cubes and placed in a baking dish. An egg mixture made with syrup, vanilla, cinnamon and nutmeg is poured over the cubed bread. After refrigerating overnight, the casserole is baked. This casserole is a tasty alternative from you normal breakfast.

Grease 9×13 baking pan. Beat 12 oz cream cheese until light and fluffy. Add in ⅔ cup granulated sugar, beat until combined.

Then beat in 1 egg and 1 tsp lemon juice until thoroughly combined. Set aside.

In another bowl, whisk together 10 eggs, ¾ cup milk, ¾ cup half-and-half, ⅓ cup maple syrup, 2 tsp vanilla, 1 tsp cinnamon and ½ tsp nutmeg. Set aside.

Next, slice a loaf bread into an even amount of slices to start making the sandwiches.

Spread bread slices with cream cheese mixture. Then place sliced strawberries on top of half of the slices. Place another slice of bread on top to create a sandwich. Repeat for all bread slices.

Cut into cubes and place ⅔ into baking dish. Top with remaining strawberries and drizzle with remaining cream cheese mixture over top. Then place remaining cubes on top. Next pour the egg mixture over top of cubes.

Press the cubes down slightly and cover with plastic wrap. Refrigerate overnight. Remove from refrigerator and let rest while preheating oven to 350 F. Cover with foil and bake 30 minutes. Then, remove foil and bake for another 25-35 minutes or until surface is golden and center is set.

Slice and serve warm.

You can serve as is, or with syrup or powdered sugar.

Ingredients

  • 10-12 slices day old Challah, French, Italian or any other bread good for French Toast
  • 12 oz light cream cheese
  • cup granulated sugar
  • 1 egg
  • 1 tsp lemon juice

  • cup maple syrup
  • 2 tsp vanilla extract
  • 1 tsp cinnamon
  • ½ tsp ground nutmeg
  • 2 cups sliced strawberries

Strawberry maple syrup

  • ½ cup strawberry jam
  • ½ cup maple syrup

Instructions

  1. Grease 9×13 baking pan. Beat cream cheese until light and fluffy. Add in sugar, beat until combined. Beat in 1 egg and lemon juice until thoroughly combined. Set aside.

Recipe Notes

To make strawberry maple syrup, combine jam and syrup in a microwave safe bowl. Microwave on medium-high 30 seconds, stir. Repeat until jam is dissolved in syrup.
