Monterey Chicken Spaghetti

I stole this recipe for Monterey Chicken Spaghetti from plainchicken.com. This tasty pasta casserole is perfect for a weeknight. In a large bowl cooked chicken is mixed with cream of chicken soup, sour cream, spinach, Monterey Jack cheese and French fried onions. Then cooked spaghetti is stirred in before everything is poured into a baking dish. Next the pasta is topped with more Monterey Jack cheese and French fried onions. Then the dish is baked until the cheese is melted and golden brown.

The ingredients for this recipe are: 12 oz dried spaghetti, 4 cups chopped chicken, 16 oz container sour cream, 2 cans (10.75 oz) condensed cream of chicken soup, 10 oz package frozen spinach, 2 cups shredded Monterey Jack cheese, 2 garlic cloves, and 6 oz can French’s French Fried onions

Cook chicken in a skillet and then chop and set aside.

Cook spaghetti according to package and drain. (I like to break the spaghetti in half before cooking, for easier serving.)

Preheat oven to 350 F. Spray 9×13 baking pan with cooking spray. Then in a large bowl, combine cooked chicken, cream of chicken soups, sour cream,drained spinach, 1 cup cheese, garlic and ½ can French’s Fried onions.

Stir to combine and then stir in cooked spaghetti.

Next pour spaghetti mixture into prepared pan.

Sprinkle with remaining cheese and onions on top.

Then bake, uncovered, for 40 to 50 minutes.

Instructions
