Easy Mexican Pizza

Then tortillas are cooked briefly in oil to crisp. Next spread enchilada sauce on the tortilla and then spread a layer of refried beans and some seasoned beef. A second tortilla is placed on top with more enchilada sauce and shredded cheese. The pizzas are baked until the cheese is melted and served with olives, tomatoes, green onions and sour cream. The ingredients for this recipe are: 1 lb ground beef, 1 packet taco seasoning, ⅔ cup water, 1 tbsp vegetable oil, 20 corn tortillas, 16 oz can refried beans, 10 oz can red enchilada sauce, 2 cups shredded cheddar cheese, 1 roma tomato, 1 small can sliced black olives and 3 green onions

Heat oil in a small skillet over medium-high heat. Once hot, cook corn tortillas one at a time until golden and slightly crisp on both sides, flipping halfway through. Remove to a paper towel.

Then cook ground beef, crumbling into small pieces with a wooden spoon as it cooks. Remove any grease. Add taco seasoning and water, stir to combine.

Next start assembling the pizzas. First spoon a thin layer of enchilada sauce on top of one corn tortilla. Spread refried beans on and top with a spoonful of taco meat.

Then place a second corn tortilla on top. Spread with another thin layer of enchilada sauce and sprinkle with more cheese.

Bake at 400 F for about 10 minutes, until cheese is melted and bubbly.

Garnish with olives, tomatoes, green onions and sour cream. Cut into wedges and serve.
