If you are missing Taco Bell’s Mexican Pizzas then this recipe is for you. Ground beef is cooked with taco seasoning. Then tortillas are cooked briefly in oil to crisp. Next spread enchilada sauce on the tortilla and then spread a layer of refried beans and some seasoned beef. A second tortilla is placed on top with more enchilada sauce and shredded cheese. The pizzas are baked until the cheese is melted and served with olives, tomatoes, green onions and sour cream.

Ingredients
1lbground beef
1packet taco seasoning
⅔cupwater
1tbspvegetable oil
20corn tortillas
16ozcan refried beans
10ozcan red enchilada sauce
2cupsshredded cheddar cheese
1roma tomatodiced
1small can sliced black olives
3green onionschopped
Instructions
Cook ground beef, crumbling into small pieces with a wooden spoon as it cooks. Remove any grease.
Add taco seasoning and water, stir to combine.
Heat oil in a small skillet over medium-high heat. Once hot, cook corn tortillas one at a time until golden and slightly crisp on both sides, flipping halfway through. Remove to a paper towel.
Assemble pizzas
Spoon a thin layer of enchilada sauce on top of one corn tortilla. Spread refried beans on and top with a spoonful of taco meat.
Sprinkle cheese over meat and place a second corn tortilla on top.
Spread with another thin layer of enchilada sauce and sprinkle with more cheese.
Bake at 400 F for about 10 minutes, until cheese is melted and bubbly.
Garnish with olives, tomatoes, green onions and sour cream. Cut into wedges and serve.
