Appetizer Shrimp Kabobs

I stole this recipe for Appetizer Shrimp Kabobs from a cookbook called Taste of Home: Backyard Barbecues who stole it from Dianna Knight from Clayton, NC. This tasty appetizer can also be served as a main dish. First garlic sits in olive oil to infuse the olive oil with garlic. Then the coating mixture is made with breadcrumbs and seafood seasoning. Shrimp is dipped in the garlic olive oil and then coated with the seasoned breadcrumbs. The coated shrimp are placed on skewers and grilled. Seafood sauce is served with the finished shrimp. This appetizer is quick and easy to make, perfect for anytime you need an appetizer.

The ingredients for this recipe are: 3 tbsp olive oil, 3 crushed garlic cloves, ½ cup dry bread crumbs, ½ tsp seafood seasoning, 32 uncooked medium shrimp (1 lb) and seafood cocktail sauce.

Soak wooden skewers if using. In a shallow bowl, mix oil and garlic; let stand for 30 minutes. (Or bottle garlic infused olive oil can be used.)

Then in another bowl, mix bread crumbs and seafood seasoning. (I use Old Bay Seafood Seasoning) Peel and devein the shrimp if needed, at this time I also remove the tails. Dip the shrimp, a few pieces at a time in oil mixture.

Remove the shrimp from the oil, then coat with crumb mixture.

Thread the shrimp onto the skewers. Use 4 shrimp per skewer, piece top and side of curve of tail for each piece. Grill kabobs, covered, over medium heat 2-3 minutes.

Turn once while cooking, continue cooking until shrimp turns pink.

Serve with seafood sauce and enjoy!

Instructions

  1. Soak wooden skewers if using.
  2. In a shallow bowl, mix oil and garlic; let stand for 30 minutes.
  3. In another bowl, mix bread crumbs and seafood seasoning. Dip shrimp in oil mixture, then coat with crumb mixture.
  4. Thread onto skewers. Grill kabobs, covered, over medium heat 2-3 minutes or until shrimp turns pink. Serve with seafood sauce.
