Homemade Fresh Raspberry Ice Cream

I stole this recipe for Homemade Fresh Raspberry Ice Cream from 5boysbaker.com. Fresh homemade ice cream is easier to make than you think. Fresh raspberries are mixed with granulated sugar in a bowl. Then in another bowl, heavy cream, whole milk, more granulated sugar and vanilla extract are stirred together until the sugar dissolves. Next the raspberries are added to the milk mixture and then the mixture chills in the refrigerator before adding to an ice cream machine. This recipe can easily be adjusted to make a little or a lot of ice cream.

The ingredients needed in this ice cream recipe are: 2 cups fresh raspberries, 2 tbsp sugar, 3 cups heavy cream, 1 ½ cups whole milk, 1 ¼ cups granulated sugar and 1 ½ tbsp vanilla. (Half-n-half can be used in place of the whole milk.)

In a medium size bowl, add raspberries (that have been washed and drained) and the 2 tbsp granulated sugar. Stir and slightly smash the raspberries a little with a fork and then set aside for about 15 minutes.

Then slightly mash the raspberries a little more with a fork. Leave some chunky pieces.

Next in a large bowl, mix the heavy cream, whole milk, 1 ¼ cups granulated sugar and vanilla. Stir until the sugar is dissolved. Then add the raspberries and any juice to the milk mixture.

Put in the fridge for about 30 minutes to chill. Pour into canister of ice cream machine and follow manufacture’s directions.

Then pour the mixture into a freezer safe container.

Next freeze the ice cream several hours to desired consistency.

Recipe Notes

I cut this recipe in half for my 1 quart ice cream machine. It also easily doubles for a larger machine.
