Cinnabon Cinnamon Roll Cake

I stole this recipe for Cinnabon Cinnamon Roll Cake from therecipecritic.com. This delicious cake is a great breakfast or brunch treat! The cake batter is made with flour, sugar, salt, baking powder, milk, eggs and vanilla. After the batter is poured into a baking pan a mixture of butter, brown sugar, cinnamon and chopped nuts is swirled into the batter. The cake is baked in an oven while a glaze is made. Drizzling the glaze on top of the warm cake finishes this tasty cinnamon treat.

Did you know? Cinnamon is the inner bark of a tropical evergreen tree. The bark is harvested during the rainy season when it’s more pliable. When dried, it curls into long quills, which are either cut into lengths and sold as cinnamon sticks, or ground into powder.¹ (see more trivia in the Trivia tab)

The ingredients for this recipe are: 3 cups flour, ¼ tsp salt, 1 cup sugar, 4 tsp baking powder, 1 ½ cups milk, 2 eggs, 2 tsp vanilla, 4 tbsp + 1 cup butter, 1 cup brown sugar, 1 tbsp cinnamon, ⅔ cup nuts, 2 cups powdered sugar, 4-5 tbsp milk and 1 tsp vanilla.

Preheat oven to 350 F. With an electric mixer combine the flour, sugar, salt, baking powder, milk, eggs and vanilla.

Once combined, slowly stir in the melted butter. The pour into a greased 9×13 baking pan.

Next in a medium bowl, mix softened butter, brown sugar and cinnamon. Stir in chopped nuts (I prefer pecans).

Drop evenly over the cake batter in pan. Then use a knife to marble and swirl over cake.

Bake for 25-30 minutes or until toothpick comes out clean from center.

At this time, a glaze can be made by adding the powdered sugar, milk and vanilla in a bowl. Then whisk until smooth and drizzle over warm cake. (Or make a thicker frosting using together 1 stick softened butter, ½ pack cream cheese, 1 cup sifted powdered sugar, 1 tsp vanilla extract and 1 tsp fresh lemon juice.)

Next, using an electric mixer beat together the butter and cream cheese. Then add the remaining frosting ingredients.

Scoop out the frosting onto the cake and then spread to cover.

Serve warm or at room temperature.
