Banana Bread Waffles

I stole this recipe for Banana Bread Waffles from todayscreativeideas.com who stole it from ihearteating.com. These yummy waffles taste just like banana bread! Brown sugar, cinnamon and nutmeg are mixed with flour, baking powder and baking soda. Then buttermilk, vanilla, mashed bananas and melted butter are mixed in next. Chopped pecans are folded in last. The batter is poured into a sprayed waffle maker and cooked until golden and fluffy.

For this recipe you will need: 2 cups flour, 1 tsp baking powder, 1 tsp baking soda, ¼ tsp salt, ⅓ cup brown sugar, 1 tsp cinnamon, ¼ tsp nutmeg, 1 ½ cups low-fat buttermilk, 1 tbsp vanilla, bananas, 2 tbsp melted butter and 6 sugar cubes.

Whisk together the flour, baking powder, baking soda, brown sugar, cinnamon and nutmeg; set aside.

Mash 2-3 ripe bananas to get 1 measured cup, set aside.

Then in a separate bowl bowl, stir together the buttermilk, vanilla, bananas and melted butter.

Next, make a well in the dry ingredients and add the wet ingredients.

I fold in ¼ cup finely chopped pecans to batter, so the waffles taste more like banana bread.

Then spray waffle iron with non-stick spray and add batter. Sprinkle waffle with pearl sugar or broken sugar cubes.

Cook waffle until golden brown about 5 minutes total.

Serve warm with syrup, powdered sugar, whipped cream or any topping you like.

Ingredients

  • 2 cups flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • ¼ tsp salt
  • cup brown sugar
  • 1 tsp cinnamon
  • ¼ tsp nutmeg
  • 1 ½ cups low-fat buttermilk
  • 1 tbsp vanilla
  • 1 cup mashed ripe bananas 2-3 large
  • 2 tbsp melted butter
  • 2 tbsp pearl sugar or 6 sugar cubes broken into chunks

Instructions

  1. Whisk together flour, baking powder, baking soda, brown sugar, cinnamon and nutmeg; set aside.
  2. In a large bowl, stir together buttermilk, vanilla, bananas and melted butter.
  3. Add flour mixture to buttermilk and stir until just combined.

  4. Spray waffle iron and add batter.
  5. Sprinkle waffle with pearl sugar or broken sugar cubes.
  6. Cook waffle according to directions about 5 minutes total.
