Egg & Cheese Hash Brown Waffles

Preheat waffle maker to med-high heat. Lightly oil the top and bottom of the waffle maker or coat with non-stick spray. Whisk 3 eggs and ¼ cup milk together in a bowl.

Add in 20 oz package refrigerator hash brown potatoes, 1 cup shredded cheddar cheese, ¼ cup chives and ½ tsp salt and ¼ tsp pepper.

Stir everything together.

For the waffle maker, measure 1 cup of potato mixture.

Spread mixture to ½ inch from edge of waffle maker.

Cook 5 minutes, until golden brown and crisp.

Serve warm. No syrup needed for these waffles!

  • ¼ cup chives
  • Salt
  • Pepper

Instructions

  1. Preheat waffle maker to med-high heat. Lightly oil the top and bottom of the waffle maker or coat with non-stick spray.
  2. Whisk eggs and milk together in a bowl. Stir in potatoes, cheese, chives and ½ tsp salt and ¼ tsp pepper.
  3. For a round waffle maker, use 1 cup of mixture, spreading to ½ inch from edge of waffle maker.
  4. Cook 5 minutes, until golden brown and crisp.
  5. Keep warm in oven.

Recipe Notes

You can use a bag of frozen hash brown potatoes, as long as they are thawed. They can be thawed overnight in the refrigerator or defrost in the microwave. Green onions or another type of onions can be substituted for the chives called for in the recipe. If using onions, besides green onions, sauté them until soft prior to mixing in the recipe. The waffles do not cook long enough to cook the onions.
