Mixed Berry Baked Oatmeal Muffins

These oatmeal muffins get a lot of flavor from a mixture of fruit. To start the muffins, oats are mixed with baking powder, cinnamon and salt. Then milk, honey, eggs and vanilla are added in next. Mashed bananas, mixed berries and chopped nuts are folded in before the batter is scooped into muffin cups. These muffins are then baked until golden brown.

Ingredients

Dry Ingredients

  • 2 cups quick cooking oats
  • ¾ tsp baking powder
  • 1 tsp cinnamon
  • ¼ tsp salt

Wet Ingredients

  • 1 ¼ cups milk
  • 2 medium bananas mashed
  • 1 egg beaten
  • 2 tsp vanilla extract
  • 2 tbsp honey
  • 1 tbsp melted butter
  • 1 ½ cups mixed berries fresh or frozen (chop strawberries into smaller pieces)
  • ¼ cup walnuts chopped

Instructions

  1. Preheat oven to 375 F. In a medium bowl, mix together the oats, baking powder, cinnamon and salt.
  2. In a large measuring cup, whisk together the milk, honey, eggs and vanilla. Add the liquid mixture to the dry ingredients in the bowl and stir just to combine. Drizzle in the butter while stirring, and then add the mashed bananas, berries and nuts.
  3. Spray 12 cup muffin tin with cooking spray. Distribute batter evenly into the tins and bake for 17-20 minutes or until the oatmeal starts to brown and a toothpick inserted in the center comes out mostly clean.
  4. Let cool 10-15 minutes before removing from pan and then serve. Refrigerate leftovers in storage container for up to 5 days, reheating in the microwave before serving

Recipe Notes

Before adding in frozen berries, make sure to drain after thawing.
