Impossible Egg Muffins

 

I was looking for a quick breakfast dish that I could make with ingredients I had on hand. I stole this recipe for egg muffins from thekitchenwitchblog.com. I had everything on hand except the peppers called for in the recipe. I have no idea why they are called impossible egg muffins, they were so easy to make.

Preheat oven to 375 F. Spray 12 muffin cup pan. Cook ½ cup diced onions and 1 cup diced ham (I used lunch meat that I had in the refrigerator) in a skillet with some salt and pepper

 

 

 

 

on medium heat until softened.

In a bowl whisk together 1 cup Bisquick, 1 cup milk, 4 eggs, ¼ cup shredded cheddar cheese, ¼ tsp black pepper and ¼ tsp parsley and ½ tsp salt.

Stir in onions and ham.

Pour batter evenly (about ¼ cup) into each muffin cup.

Bake 20 minutes. 

Sprinkle with 2 oz (½ cup) cheese on top and bake 5 minutes more.

Serve warm.

Ingredients

  • 1 cup Bisquick baking mix
  • 1 cup skim milk
  • 4 eggs
  • ½ tsp seasoned salt
  • ½ cup chopped peppers
  • ½ cup diced onion
  • 1 cup diced ham
  • 2 oz reduced fat shredded cheese

Instructions

  1. Preheat oven to 375 F. Spray 12 muffin cup pan.
  2. In a bowl whisk together Bisquick, milk, eggs and salt. Stir in peppers, onions and ham.
  3. Pour batter evenly (about ¼ cup) into each muffin cup. Bake 20 minutes. Sprinkle with 2 oz (½ cup) cheese on top and bake 5 minutes more. Serve warm.

Recipe Notes

I cook the onions and ham in a skillet with some salt and pepper on medium heat until softened. I did not want to bite into raw onions in the cooked muffin. I added ¼ tsp black pepper and ¼ tsp parsley to the Bisquick mix. I also added ¼ cup shredded cheddar cheese in this step. You can do a lot of substitutions: you can use cooked bacon instead of ham or use different vegetables to your preference. I used cheddar cheese, you can use any cheese or cheese blend you prefer.
