Oven Roasted Home Fries

I stole this recipe for Oven Roasted Home Fries from cupcakes-and-sarcasm.com. These baked homes fries are very easy to make. Cubed potatoes are tossed with olive oil, paprika, garlic powder, onion powder, salt and pepper. The seasoned potatoes are spread on a baking sheet. Flip the potatoes over once while baking. These potatoes can be a side dish or part of a breakfast or brunch menu. This recipe for home fries is healthier than the deep fried version served at restaurants.

For this recipe you will need 2 tsp olive oil, 2 tsp paprika, 2 tsp salt, 1 tsp garlic powder, 1 tsp onion powder and 1 tsp black pepper.

Cube 2 lbs washed Russet Potatoes and add the potatoes to a large bowl. Then add the spices and olive oil to the potatoes.

Toss well to coat the potatoes.

Preheat oven to 400 F and line a baking sheet with parchment paper. Next, spread the potatoes onto the prepared baking sheet into a single layer, spreading out as much as you can.

Bake 20 minutes and then remove from oven and flip the potatoes, spreading into a single layer. Bake another 20 minutes or until the potatoes reach a desired crispness.

When done, sprinkle parsley over the home fries and toss. Taste for seasoning and add more salt and pepper if needed.

  • 2 lbs Russet Potatoes peeled and cubed

  • ¼ cup fresh parsley chopped

Instructions

  1. Preheat oven to 400 F and line a baking sheet with parchment paper.
  2. In a large bowl, toss the cubed potatoes with olive oil, paprika, garlic powder, onion powder, salt and pepper until the potatoes are evenly coated.
  3. Spread the potatoes onto the prepared baking sheet into a single layer, spreading out as much as you can.
  4. Bake 20 minutes and then remove from oven and flip the potatoes, spreading into a single layer.
  5. Bake another 20 minutes or until the potatoes reach a desired crispness. You can turn the broiler on low to crisp if needed.
  6. When done, sprinkle the parsley over the home fries and toss. Taste for seasoning and add more salt and pepper if needed.

Recipe Notes

I leave the peel on the potatoes, just make sure to scrub them well.
