Baked Seasoned French Fries

I stole this recipe for Baked Seasoned French Fries from therusticelk.com. This is a tasty way to make French fries at home. Potatoes are sliced into strips and soaked in cold water for 1 hour. Then olive oil is spread on a cookie sheet lined with foil. The potatoes are drained and placed in a large plastic bag. More olive oil and a dry spice mixture are added to the bag. After shaking the bag to coat the potatoes, the potatoes are dumped onto the cookie sheet. The fries are baked until golden.

For this recipe you will need 1 lb russet potatoes. To make the “French Fry” cut, first slice the potatoes into pieces lengthwise.

Then slice the round pieces you cut into strips.

Next, in a large bowl soak the potato pieces in cold water for about 1 hour.

While the potatoes soak in a small bowl combine ¼ tsp dried thyme (I substitute basil), ¼ tsp dried oregano, ⅛ tsp dried rosemary (I substitute Italian seasoning), ¼ tsp garlic powder and ¼ tsp old bay seasoning.

Then, drain the potatoes and dry them really well.

Preheat oven to 425 F. Line a cookie sheet with foil. Spread olive oil on foil. Take the fries and place them in a gallon freezer bag. Add 1 ½ tbsp olive oil and pour spice mix into bag. Then seal and shake potatoes until coated.

Next, dump the potatoes on the oiled foil lined cookie sheet in a single layer.

Bake at 425 F for 30-45 minutes or until golden brown.

Sprinkle with salt before serving.
